What about making the export to those formats available to wider
public. Can we eventually bring these abandoned features back to the
book creator. Could I help in such an effort.
This is important, but I don't understand whether the Labs instance
you linked is a server which can be used by any MediaWiki wiki as
renderer for the Collection extension ($wgCollectionMWServeURL).

Well for example you can feed it with a Wikipedia book like
https://en.wikipedia.org/wiki/Book:River_martin
and render the LaTeX, EPub and Odt version of it. The CPU-time for a
single rendering process is limited to one hour, so keep a eye on the
size of the book you intent to render. In the command line version of
mediawiki2latex there are no such limitations and you can generate books
which are not really useful due to there size like this one with more
6000 pages
