The Wikimedia wiki farm is, to my knowledge, the most complicated wiki
farm running MediaWiki there is. Of course it's possible, but you
probably won't want to reproduce the entire setup.

Can I do this without having to go and register subdomains etc. If so
how? Will the current database structure support this??
