That is completely and entirely up to you. A wiki is a freeform,
free-range canvas...and if it's yours, it's yours to lay out how you
want.
A sensible convention, however, at least for wikis using MediaWiki, is
to use section headings to split up discussions into smaller threads.
One can even add a section to a talk page using the "+" link near the
edit button. Sections can be edited alone, meaning there's less markup
to look at, and it's easier to locate what it is you're responding to
in the text box.
Of course, there's nothing stopping you doing that *and* using ----.
Ah, decisions.
